How to make sheet pan pancakes

Cooking time: 5 minutes

Ingredients
- Nonstick cooking spray
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons of baking powder
- 1 tablespoon of sugar
- 1 teaspoon salt
- 1 ¼ cups of milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- ½ cup sliced strawberries
- ¼ cup blueberries
- ¼ cup mini chocolate chips
Directions
- Preheat oven to 425 F. Line baking sheet with parchment paper and spray with nonstick cooking spray. Set aside.
- Mix the flour, baking powder, sugar and salt in a large bowl. Add milk, egg and melted butter; mix until smooth.
- Pour the batter onto the prepared baking sheet and smooth it into an even layer that covers the pan. Finish with strawberries, blueberries and chocolate chips.
- Cook for 5-7 minutes, or until cooked through and golden brown. Let cool slightly before cutting into squares.

Ingredients
- Nonstick cooking spray
- 1 onion, diced
- 1 pound turkey sausage
- 4 eggs
- ½ cup grated cheddar cheese
- 1 cup egg white pancake mix
Directions
- Preheat the oven to 350 F.
- Spray a 12-cup muffin pan with nonstick cooking spray; set aside.
- Spray the large skillet with nonstick cooking spray.
- In the prepared skillet over medium heat, cook the onion until translucent. Add the turkey sausage and cook until no longer pink. Remove from heat.
- Lightly beat the eggs in a large mixing bowl. Add shredded cheese, pancake mix, and sausage-onion mixture; mix well.
- Fill the prepared muffin cups about 3/4 full with the mixture.
- Bake for 18-20 minutes, or until the top is golden brown.
