How to make Steak Parmesan with grilled vegetables?
Ingredients
- 2 well-trimmed beef bones or porterhouse steaks, cut 1 inch
- ¼ cup grated Parmesan cheese
- 2 tablespoons olive oil, light
- 2 tablespoons red wine vinegar
- 1 red pepper
- 1 yellow pepper
- 1 large red onion, cut into 1/2-inch slices
Spices
- 1 tablespoon of crushed garlic
- 2 teaspoons dried basil
- 1 teaspoon pepper
Directions
- Combine the herbal ingredients in a small bowl: mix well. Remove four teaspoons of the spice mixture and press them into both sides of the steak.
- Add cheese, oil and vinegar to the remaining spice mixture. Mix well; set aside.
- Place the steak in the center of the grill – over medium ash-covered coals. Arrange the vegetables around the steak. Grill the steak uncovered for 14 to 16 minutes for medium doneness, turning occasionally. Grill the peppers for 12 to 15 minutes and the onions for 15 to 20 minutes or until soft, turning once. During the last 10 minutes of grilling, brush the vegetables with the reserved cheese mixture.
- Season the steaks with salt to taste. Remove the bone and cut the steaks crosswise into thick slices.
- Serve with vegetables.
