The Ultimate Guide To Foraging For Ramps

Cooking ramps can be done by roasting, steaming, sautéing or boiling. In the photo above I fried them in a little brown butter with a little lemon pepper seasoning. They were delicious!

There are many ways to use ramps in recipes such as soups, eggs, salads and pasta dishes.

The most common way is to add them raw to any dish where they can be cooked together with the other ingredients (such as onions).

It’s a good idea not to salt your ramps until you’ve finished cooking, otherwise the leaves will harden. You want all those flavors to stay intact while serving!

To use the stems, you can blanch them and then saute or pressure cook for a few minutes before adding your favorite sauces and spices. If you have more time, you can also make pesto with scratches as a starter, but it is best not to leave the plants unattended for too long, as they will quickly turn black – which is not pleasant to eat.
