As you may already know, we have been busy creating a food forest on our property for the past two years, complete with fruit trees, berry bushes, herbs and perennial vegetables. An exciting addition this year is our strawberry/asparagus planting area. For the first time we have our own homegrown strawberries!
I’m beyond excited to share this old-fashioned strawberry shortcake recipe that holds a special place in my heart. I grew up eating it and the low sugar shortcake really lets the strawberries shine. These cookie-style shortcakes are deliciously rustic, and their low sugar content highlights the natural sweetness of the berries.
The preparation is similar to the making Scones, but the addition of a beaten egg gives these shortcakes a more cake-like texture. Although cake flour is recommended for extra lightness, all-purpose flour can be used if you have it on hand.
