Instructions
- Heat the coconut oil in a large frying pan over medium heat.
- Fry the sliced chicken for five to seven minutes.
- Add Broccolini, onion, red pepper and minced garlic to the pan and fry the vegetables until they start to soften.
- Add all the varieties and keep stirring.
- Add sweetener, Sriracha, curry paste, lime juice, soy sauce and coconut milk and simmer for another 3 minutes.
- Prepare the noodles according to the instructions on the package.
- Serve the noodles in a bowl and top with the chicken-curry mixture.
