Make chickweed pesto
Pesto is a wonderfully versatile sauce, traditionally made with basil, garlic, pine nuts, Parmesan cheese and olive oil. However, this recipe focuses on chickweed, which gives the dish a fresh, slightly grassy taste.
To make chickweed pesto you will need:
- 2 cups fresh chickweed, washed and dried
- 1/2 cup nuts (pine nuts, walnuts, or almonds work well)
- 2-3 cloves of garlic, depending on your taste
- 1/2 cup grated Parmesan cheese (or a vegan alternative)
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Combine the chickweed, nuts and garlic in a food processor and pulse until coarsely chopped. Add the cheese and pulse again. With the processor running, slowly pour in the olive oil until the mixture reaches the desired consistency. Season with salt and pepper.
