Ingredients
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- 1/4 cup flaxseed meal (linseed meal)
- 1/2 teaspoon baking soda
- 1/4 cup millet flour (millet flour)
- 1 teaspoon caraway seeds, ground
- 2 tablespoons wheat gluten
- 1/4 teaspoon kosher salt
- 1 1/4 cup low-fat buttermilk or low-fat milk
- 2 egg whites
Directions
- Heat the oven to 350 F. Sift the dry ingredients into a large bowl.
- In a separate bowl, mix the milk and egg white. Mix well. Add the milk and egg mixture to the dry ingredients. Mix until well moistened.
- Lightly grease the bottom of a 5-by-8-inch loaf pan. Place the dough in the pan. Using a sharp knife, make a slit in the dough lengthwise, about 1/4 inch deep.
- Bake for 50 to 60 minutes. To test doneness, insert a skewer or knife into the center of the bread. It should come out clean. Let it cool thoroughly on a rack before cutting.
Note: You can add other grains/seeds to the flour. I love adding sunflower seeds and pumpkin seeds. Remember, this bread is supposed to look rustic.
