How do you make St. Patrick’s Day sandwiches?
Yield: 8 sandwiches
Ingredients
- 8 ounces regular cream cheese spread, softened
- 1 cup finely grated mozzarella cheese
- salty
- 4 English muffins
- 24 slices of cucumber
- 8 thin slices of green pepper
- fresh coriander leaves
- lemon juice
- lemon slices, for garnish (optional)
Directions
- Mix the cream cheese spread, mozzarella cheese and salt well in a bowl.
- Divide English muffins in half. Cut each muffin half into a clover shape.
- Divide the cheese mixture over each muffin half.
- Place three cucumbers on each ‘clover’, one on each ‘leaf’. Use a slice of green pepper as a stem. Place the coriander leaf on each sandwich.
- Sprinkle the sandwiches with lemon juice and add lemon slices for garnish, if desired.
