Make Your St. Patrick’s Day Spread Green with Envy

(Culinary.net) Freshen up your St. Patrick’s Day menu with simple, light sandwiches inspired by the traditional color of the festivities. These open-faced nubs can be perfect for lunch, a snack or even as an appetizer for gatherings with friends and family.

These St. Patrick’s Day Sandwiches are topped with a mixture of soft cream cheese and mozzarella, then topped with crunchy cucumber and a green pepper stalk. They’re simple and cute, making them a fan favorite at almost any green gathering. They are also sprinkled with lemon juice to add a little sourness and create a nice, light bite.

Moreover, this recipe is quick to make. If you’re in a hurry to get everything on the table for the party, you can easily throw it together and have it on the platter in no time.

The sandwiches jump off the plate with their bright, seasonal garnishes. While you are sure to turn heads and ask your loved ones, “Where did you get this idea?” they’re also an easy way to sneak some veggies into your kids’ diets.

How do you make St. Patrick’s Day sandwiches?

Yield: 8 sandwiches

Ingredients

  • 8 ounces regular cream cheese spread, softened
  • 1 cup finely grated mozzarella cheese
  • salty
  • 4 English muffins
  • 24 slices of cucumber
  • 8 thin slices of green pepper
  • fresh coriander leaves
  • lemon juice
  • lemon slices, for garnish (optional)

Directions

  1. Mix the cream cheese spread, mozzarella cheese and salt well in a bowl.
  2. Divide English muffins in half. Cut each muffin half into a clover shape.
  3. Divide the cheese mixture over each muffin half.
  4. Place three cucumbers on each ‘clover’, one on each ‘leaf’. Use a slice of green pepper as a stem. Place the coriander leaf on each sandwich.
  5. Sprinkle the sandwiches with lemon juice and add lemon slices for garnish, if desired.
