Broccoli Cheese Scrambled Eggs

This will quickly become a favorite healthy breakfast for you and your family. It’s super fast, ready in about 5 minutes. It’s surprisingly tasty. It’s filling and best of all, it’s low in calories. You will find that it is satisfying and will stay with you all morning. You won’t find yourself hungry within a few hours like with some other breakfast foods. And it’s a great egg dish to make a larger batch and divide it into two portions and reheat the rest in the microwave the next day.

This is how you make scrambled eggs with broccoli cheese

Ingredients:

  • 1 pasture-raised egg
  • 1/2 cup organic egg whites
  • 1 cup broccoli, chopped
  • 1 slice organic American cheese, cut into cubes
  • 1/2 tsp Paleo Valley Rosemary Garlic Herb (or herbs of your choice)
  • 1 apple, cored and sliced
  • 2 tbsp sauerkraut
  • avocado oil spray

Directions:

  1. Heat a skillet over medium heat and coat with avocado oil spray. Add the broccoli and fry for a few minutes.
  2. Add the whole egg, egg white and spices to the pan and cook until the eggs are firm.
  3. Fold in the American cheese and cook until slightly melted.
  4. Serve with sauerkraut and your favorite fruit.

Can you warm up these eggs?

Yes! You may not have realized it, but scrambled eggs are actually great for meal prep! You can reheat scrambled eggs in 30 second increments in the microwave in a covered bowl. Scrambled eggs can be stored (in the refrigerator) and reheated for up to 3 days.

How do I know when the eggs are ready?

Scrambled eggs are ready when the eggs are set and you see no liquid or streaks of egg white.

Can I use other proteins or vegetables in this recipe?

Yes! If you use other vegetables (popular additions include mushrooms and olives), be sure to fry them first to avoid releasing moisture into the dish. Ham cubes are a great source of protein.
