These are a bit like cheesy nachos, but instead of chips, we replace fresh sweet potato skins … so better! Simply put with sweet potatoes, chicken, chipotle peppers, herbs, a touch of lime, spinach and a generous amount of sharp cheddar cheese. Every homemade, baked in the oven, sweet potato skin is delicious … and also quite healthy.
How to make chipotle chicken sweet potato skins
Ingredients:
- 3 Average sweet potatoes
- 1 pound Skip breasts without bones without bones
- 1 can (14 ounce) Chickpeas, empty (Optional)
- 4 tablespoons Extra virgin olive oil
- 4 clove Garlic, minced meat or grated
- 2-3 Chipotle Chilies in Adobo, minced meat (more or less to your taste)
- 2 teaspoons chili powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- kosher salt and black pepper
- Six of 1 lime
- 2 cup baby spinach, roughly minced meat
- 1 cup fragmented white cheddar cheese
- 1/4 cup fresh coriander, minced meat
Route description:
- Preheat the oven to 425 degrees F. Prick the sweet potatoes everywhere with a fork. Bake directly on the rack to soft, 50-60 minutes. Allow to cool.
- Cook the chicken at the same time. Place the chicken and chickpeas – if you use, in a baking dish. Add the olive oil, garlic, chipotle -chili, chili powder, onion powder, oregano, cumin, lime peel and a pinch of salt and pepper, throw gently to coat. Spend the oven and bake for 20-25 minutes, until the chicken is cooked. Spread the spinach during the last 5 minutes of boiling and cook for 5 minutes until it wilt.
- Sip the chicken with the help of 2 forks and then throw with the chickpeas, spinach and all the oil that is left in the baking dish.
- Scrape the sweet potato meat from the skin and leave 1/2 inch thick layer of sweet potatoes. Brush the skins with a little olive oil and bake for 5 minutes until they are crispy. Remove the skins from the oven and stuff with the chicken. Top with grated cheese. Return to the oven and bake for 10 minutes until the cheese has melted. Serve with fresh coriander and Greek yogurt if desired.
