Comfort food just got a whole lot easier with this Crockpot Chicken and Rice!
This is an easy and delicious Crock Pot chicken recipe. It’s a fantastic slow cooker meal that your family will love. Use the piece of chicken you prefer. We chose boneless, skinless chicken thighs. The chicken is cooked in a sauce made from soy sauce, honey, ketchup and spices. It’s sweet and savory. Initially the sauce will be thin, so if you prefer a thicker sauce we recommend using the cornstarch mixture. Delicious served with rice and a vegetable on the side.
This is a complete meal in one pot, perfect for busy weeknights or lazy weekends. I promise you will love it as much as we do.
How to make crockpot honey chicken and rice
Ingredients
- 2 pounds boneless chicken
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup honey
- 1/4 cup soy sauce
- 1/8 cup chopped onion
- 1/8 cup ketchup
- 1 tablespoon vegetable oil
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
- 2 tablespoons corn starch
- 1/4 cup water
Directions
- Season both sides of the chicken with salt and pepper. Put it in the Crockpot. Combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes.
- In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic, and pepper flakes.
- Pour over the chicken.
- Cook on high for 2 – 3 hours or on low for 4 – 5 hours.
- Once the chicken is cooked, remove it and cut it into bite-sized pieces. Whisk 2 tablespoons cornstarch with 1/4 cup water to thicken the sauce.
- Pour the mixture into the Crock Pot and whisk to combine.
- Add the chicken back to the Crock Pot. Place the lid back on and cook on high for 30 – 45 minutes, or until the sauce has thickened. Once the sauce has thickened, serve the chicken and sauce over the rice of your choice.
Note: We used boneless, skinless chicken thighs. If it has honey in it, it will burn around the edges. To prevent this, you can use a liner or stir around the edges every hour.
