Elotes, Mexican, Street, corn, Kob, covered, in herbs and cheese

Ohmage pays this recipe to the extremely popular and delicious street choirs of Mexico called Elote. A staple from summer grilling, it’s easier to make at home than you might think.

Ears from corn in Elotes change – the classic Mexican street food of corn curves on the grill and then in a spicy and creamy chili, garlic and cotija -cheese -spiked sauce – is the best way to serve corn.

Elotes are a staple on my Balkongrill in the summer. It is about as simple and cheap as you can imagine, and there is nothing – really nothing – that is eaten and eaten as quickly as a hot plate of this corn. I usually count on making at least one and a half ear per person.

Ingredients

  • 4 shot ears maize
  • Vegetable oil (for brushing on the corn)
  • 1/4 head of mayonnaise
  • 1/2 cup of crumbled cotija -cheese
  • 1 medium clove garlicfine minced meat (over 1 teaspoon))
  • Ancho Chile Powder
  • Lime weds

Instructions

  1. Week 4 wooden skewers in water, 30 minutes. Heat a grill for high.
  2. Place a skewer in every ear of corn. Brush the corn with vegetable oil. Grill, turns around, until they are carved everywhere, 8 to 10 minutes.
  3. Combine cheese, mayonnaise, sour cream or crema, coriander, chili powder and garlic in a large bowl. Stir to homogeneous and set aside.
  4. Brush the grilled corn with the above mixture and sprinkle with the cheese. Sprinkle with chili powder and serve with lime wedges.

Option

If you don’t want to take the trouble to shoot the grill, it is just as tasty and easy to make this corn when it is out. The key to cooking eSquites indoors is to remove the corn kobben’s corn kobben for You cook them. Cook the grains in a ripping hot wok (you can use a normal frying pan, although it is a bit messier), let them sit in place until the sugars caramelize and develop a deep, dark char, before they throw and let them be charged again.
