Grilled Summer Squash |

Need a quick and easy summer leegish scale? Or do you have a load of yellow summer pumpkin? Try this perfect grilled pumpkin! It is simple but full of great taste, seasoned with Italian herbs such as Basil and Oregano.

How to make grilled summer pumpkin

Ingredients

  • 3 medium yellow summer pumpkin (or a mix of pumpkin and small zucchini)
  • 1 ½ tablespoons of olive oil
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • ½ teaspoon of garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • 2 squeezes red pepper flakes (optional)

Route description:

  1. Heat for a grill to medium heat (375 to 450 degrees Fahrenheit).
  2. Cut the pumpkin on the bias, about 1/2 “thick. Place it in a bowl and mix it with the olive oil, oregano, garlic powder, onion powder, kosher salt and red pepper flakes (if used).
  3. Place the pumpkin directly on the grill grilles and grill about 2 to 3 minutes per side (a total of 4 to 6 minutes), until they are charred and soft. Taste and add a few gadgets of extra salt if necessary.

How to cut squash for grilling

There are a few different ways to cut the summer pumpkin for the grill. Here is a small breakdown:

  • Rounds. You can cut the pumpkin into 1/2-inch thick rounds. But the way we like to do it is …
  • About the bias (diagonal). It looks like rounds, but if you cut the bias (diagonally), you get larger, most interesting forms.
  • Boards. You can also cut the pumpkin width into long shelves.

Variations on herbs for grilled pumpkin

Yellow summer pumpkin and zucchini work well with the Italian and Mediterranean herbs, but there is no reason not to change it. Here are a few other herbs that would work well.

Important: Keep in mind that many of these blends have included salt. Use ¼ teaspoon of salt below and then sprinkle with the herbs.

  • Fajita or taco -herbs: Make them a Taco filling! Try purchased or homemade Fajita herbs or taco herbs.
  • Cajun -herbs: Add pizzzazz and maybe a little heat! Try purchased or homemade cajun herbs or black herbs (not spicy).
  • Old bay: Mix it and add everyone’s favorite, Old Bay!
