Introduction to fermented shrubs
A shrub is a delicious drinking vinegar that contains vinegar, fruit and sugar. It is a versatile concoction that can be flavored with sparkling water, alcohol, bitters and other additives once prepared.
There are several methods of preparing a bush. Some recipes for fermented shrubs instruct you to heat all the ingredients before straining and using them, while others recommend a no-cook method.
Personally, I prefer the no-boil method, also known as the cold method. This method retains more beneficial nutrients and enzymes, especially if you use apple cider vinegar, which is raw and unfiltered.
