  • 2 cups cooked sushi rice
  • 2 radishes, sliced

  • 1 mango, cubed

  1. Bring water to a boil in a medium saucepan over high heat. Add farro, reduce heat and simmer, uncovered, until tender, 20-30 minutes. Draining; do not rinse.
  2. In a large bowl, whisk together oil, lemon juice, spices, honey and salt. Stir in cooked farro to coat evenly; set aside or let cool in the refrigerator.
  3. Once the farro is chilled or at room temperature, fold in the tuna, radish or cucumber, and tomato. Sprinkle with nuts and black pepper, to taste. Serve with cheese if desired.
