Marinated Chicken With Cauliflower Rice

This delicious spicy dish is a twist on the classic chicken And rice meal. The Cauliflower can help keep carbohydrate loads to a minimum, and Serrano pepper and fresh coriander adds freshness and warmth to your tasty dishes homemade peanut sauce.

  • Preparation: 15 minutes
  • Ready about: 1 hour 15 minutes

Instructions

  1. Mix the chicken thighs with olive oil and herbs and let them marinate for at least 1 hour.
  2. Prepare marinated chicken thighs on the grill or in the oven.
  3. Once done, set it aside to cool slightly before serving.
  4. Then mix the coconut milk, peanut butter, soy sauce and chili in a small saucepan.
  5. You need to bring it to a boil and let it reduce slightly.
  6. Add coriander just before serving.
  7. Heat the cauliflower rice in a large frying pan with a little olive oil.
  8. Cook for 3 – 5 minutes until the cauliflower is tender and then remove from the heat.
  9. Add the spinach and let it shrink.
  10. Slice the chicken and serve with the cauliflower mixture and sauce.
  11. Top it off with chopped peanuts.
