These are nacho average nachos. A refined view of loaded nachos, we have replaced tortillachips with fresh cucumber and piled up with our Mediterranean tuna salad and layers on layers of vegetables for a indulgence that you don’t regret.

  • 1 can bumble bee solid white albacore tuna, emptied

  • 1 tablespoon of lemon juice
  • 1 clove garlic, minced meat
  • ½ teaspoon of cumin
  • ¼ teaspoon of harissa powder
  • 1 English cucumber
  • 1 roma -tomato, minced meat
  • 2 tablespoons of cut calamata olives
  • 2 tablespoons of cut pepperoncinis
  • 3 tablespoons of chopped red onion
  • 3 tablespoons Tahini
  • ½ cup of approved baba ghanoush
  • 1 tablespoon of chopped parsley

Instructions

  1. In a medium bowl, mix the bumblebee, mayor, lemon juice, garlic, cumin and harissa and then set aside.
  2. Cut cucumber into ¼ inch thick “chips” and rank on a dish.
  3. Top cucumbers with tuna mix, tomato, olives, pepperoncinis, onion, a drizzle from Tahini, Baba Ghanoush and a sprinkling of parsley.
