Fortunately, zucchini is as versatile in the kitchen as it is fast growing. Not sure where to start? This Spicy Asian Zucchini is a simple, flavorful dish that’s perfect for adding a pop of spice and bold flavor to any meal!

This dish is perfect as a side dish to grilled meat, noodles or rice and can easily be adjusted to your spice level. It’s a simple, healthy and vibrant dish that adds a burst of flavor to any meal.

This is how you make Spicy Asian Zucchini

Ingredients:

  • 2 medium zucchini, cut into rounds or half moons
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon of rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon chili flakes or 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon honey or sugar (optional, for sweetness)
  • 1 tablespoon sesame seeds (optional, for garnish)
  • 2 tablespoons green onions, sliced ​​(optional, for garnish)

Directions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, chili flakes or Sriracha, and honey or sugar (if using). Set aside.
  2. Fry the zucchini: Heat the vegetable oil in a large skillet over medium heat. Add the sliced ​​zucchini and stir-fry for 3-4 minutes, until the zucchini is soft but still crunchy.
  3. Add the garlic and ginger: Stir in the minced garlic and ginger and cook for another minute until fragrant.
  4. Brush with sauce: Pour the sauce over the zucchini and toss to coat. Cook for another 1-2 minutes so that the sauce thickens slightly and the zucchini glazes.
  5. Serve: Remove from heat and garnish with sesame seeds and sliced ​​green onions, if desired. Serve immediately as a side dish with rice, noodles or your favorite protein.
