Elder (Sambucus Nigra) is usually called black or European elder. The flowers and berries have a long history of use in the Western world as food and for its health benefits.

In ancient times the flowers were appreciated for cosmetic applications. Considered a plant of protection in the Middle Ages, the branches of these productive, deciduous bush were usually placed above a doorway or threshold of a house to ward off angry spirits and protect the inhabitants. Elder is written by historical healers such as Dioscorides, Galen, Pliny and Hippocrates, and is nowadays still called in many European pharmacopeia.

Recipes are plentiful for different ways to use elder, including the delicious drink, “Elderflower Fizz”, which is easily made at home by fresh or dried blossoms. The slightly flared flowers are common ingredients in other liqueurs, tisanes (tea) and tinctures. They can also be added to muffins, bread, pancakes or other fried products. The fresh flowers have a white Unbel head cluster that is harvested in late spring or early summer at the height of their flowering. A distilled hydrool of the flowers, or a simple herbal tea, is often used as a skin tonic and was used in the 1800s to relieve and even skin color. It has somewhat contracting, tonic and skin -conditioning effects per contemporary Directorate Health and Consumers of the European Commission.

The elderflower is known to support the optimum body temperature of the body, soothes the skin, as a mucus -solving and the digestive costs and more calm.

The deep-purple fruits are rich in protective and rich in free radical clearance of anthocyans and can help support a healthy recovery time after physical exertion. These berries are specifically used to support the natural immune response of the body, calming discomfort associated with common insects, promoting healthy blood sugar levels and cardiovascular health. They were well studied because of the ability to support the immune system, a healthy inflammatory response and more with numerous clinical research data. The berries are used to make sucking tablets, hearts, wine, tea and other food products. Syrup preparations and glyceriettinctures are delicious and safe for children and are so delicious that children voluntarily take them without complaints.

Elder is often grown as a decorative bush with numerous cultivars that are available at most nurseries. The flowers and berries should never be eaten fresh; They contain a mild toxic alkaloid that is destroyed with cooking.
