This is how you make Italian Christmas quiche
Ingredients
- 1 – 9-inch pie crust, homemade or store-bought (see note below)
- ½ pepperoni stick, sliced and chopped into small pieces
- ½ box frozen asparagus or about 1 cup leftover cooked asparagus, cut into 1-2 inch pieces
- ¾ cup finely grated mozzarella
- ½ cup finely grated Parmesan cheese
- 4 large eggs
- 1 ½ cups half-and-half
- 1 teaspoon Italian spice mix
Directions
- Heat the oven to 400 degrees F.
- If using frozen asparagus, thaw it and use paper towels to remove excess moisture.
- Sprinkle the asparagus and pepperoni pieces over the bottom of the pie crust.
- Spread with the grated cheese.
- Beat the eggs in a medium bowl with a whisk until slightly frothy. Stir in half and half and Italian seasoning.
- Pour the egg mixture over the filling. Make sure no part of the cheese sticks out too high.
- Place in the oven on the middle rack. Reduce temperature to 350 degrees F and bake for 30-45 minutes until done. The blade should come out clean when stuck in the center.
Notes:
- If you want to make your own pie crust, we have a vegan pie crust or butter pie crust recipe.
- You can buy Italian seasoning mixes in the herb and spice section of supermarkets. They cost no more than other herbs and spices.
- This quiche freezes well. You can also keep it in the refrigerator for a few days. I highly recommend reheating the dough in the oven so the dough crisps up.
