This chicken and rice soup is the embodiment of cozy vibes in a bowl, with dried tarragon that steals the show. Dried Dragon has a more muted taste than fresh, which offers a soft taste that supplements the other ingredients beautifully. Immediately brown rice is a huge time saving. To reduce further in preparation time, you are looking for pre -fiddled Mirepoix (carrots, onions and celery) in the aisle where prepared vegetables are sold.

How to make chicken and rice soup

Ingredients

  • 2 tablespoons of unsalted butter
  • 3 medium -sized stems celery, fine minced meat
  • 2 medium -sized carrots, thinly cut
  • 1 small yellow onion, fine minced meat
  • 8 Ons Cremini -Champignons, thinly cut
  • 3 medium clove garlic, fine minced meat
  • 3 cups of fragmented cooked chicken fillet
  • 8 cups of chicken broth reduced
  • 3 tablespoons of lemon juice
  • 1 tablespoon of dried tarragon
  • 2 teaspoons of dried basil
  • 1 1/4 teaspoons of salt
  • 1/2 teaspoon of ground pepper
  • 1 1/4 cups of fast -strap brown rice
  • 1 tablespoon of fresh tarragon leaves

Instructions

  1. Melt butter in a large Dutch oven over medium heat. Add celery, carrots and onion; Cook, occasionally stir until softened, about 4 minutes. Add mushrooms and garlic; Cook, occasionally stir, until the majority of the fluid of the mushrooms has evaporated for about 4 minutes.
  2. Stir in chicken, broth, lemon juice, dried tarragon, basil, salt and pepper. Put simmering on high heat. Stir in rice; Cover and reduce the fire low. Cook, undisturbed, until the rice is soft, 10 to 12 minutes.
  3. Divide the soup into 6 bowls and top evenly with tarragon leaves.
  4. Serve it with a salad and some crispy bread for a perfect meal!

Recipe for chicken rice soup is the ultimate comfort food, and it is perfect for meal preparation because it freezes well. Store leftovers in an airtight container in the refrigerator for a maximum of 4 days.

To freeze leftovers, cool the soup to room temperature and then place it in freezer bags. Close completely and lie flat to freeze in a thin layer. This helps to defrost the soup quickly when you need it for dinner.
