This is how you make Spicy Asian Zucchini
Ingredients:
- 2 medium zucchini, cut into rounds or half moons
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, finely chopped
- 2 tablespoons soy sauce
- 1 tablespoon of rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon chili flakes or 1 tablespoon Sriracha (adjust to taste)
- 1 teaspoon honey or sugar (optional, for sweetness)
- 1 tablespoon sesame seeds (optional, for garnish)
- 2 tablespoons green onions, sliced (optional, for garnish)
Directions
- Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, chili flakes or Sriracha, and honey or sugar (if using). Set aside.
- Fry the zucchini: Heat the vegetable oil in a large skillet over medium heat. Add the sliced zucchini and stir-fry for 3-4 minutes, until the zucchini is soft but still crunchy.
- Add the garlic and ginger: Stir in the minced garlic and ginger and cook for another minute until fragrant.
- Brush with sauce: Pour the sauce over the zucchini and toss to coat. Cook for another 1-2 minutes so that the sauce thickens slightly and the zucchini glazes.
- Serve: Remove from heat and garnish with sesame seeds and sliced green onions, if desired. Serve immediately as a side dish with rice, noodles or your favorite protein.
