(Culinary.net) The same old brunch menu week after week can get tiring and boring. It’s boring, boring and your taste buds get used to the same flavors repeatedly.

It’s time to add something new to the table with fresh ingredients and simple instructions to enhance your weekend spread.

Try this recipe for an Easy Brunch Quiche that will delight your senses with every bite. This quiche is layered with lots of flavors and a variety of ingredients to give it a delicious taste.

To make this dish, start with a package of broccoli and cheese and microwave for 5 minutes until heated through.

Add 12 slices of chopped bacon to a skillet. While cooking, add 1/2 cup of green onions. Cook for 2 minutes and then add 1 cup of mushrooms to the skillet. Cook for 4 minutes and drain the fat.

In a small mixing bowl, combine four eggs and 1 cup of milk. Beat together. Add the egg mixture to the broccoli and cheese. Also add 1 cup of grated cheese and stir the ingredients together.

Spoon the bacon mixture into two separate pie shells and pour the egg and broccoli mixture over the top. Sprinkle with a little more cheese and then bake at 350 F for 35-45 minutes.

With a range of ingredients from broccoli to bacon, this quiche is a brunch hero. During baking, the cheese is completely melted, and with each bite the mushrooms add texture and earthy flavor. The ingredients are combined to make something warm, hearty and fresh.

Easy brunch quiche

Servings: 12

Ingredients

  • 1 package (10 ounces) frozen broccoli with cheese
  • 12 slices of bacon, chopped
  • 1/2 cup green onions, sliced
  • 1 cup mushrooms, sliced
  • 4 eggs
  • 1 cup of milk
  • 1 1/2 cups grated cheese, divided
  • 2 frozen deep dish pie shells (9 inches each)

Directions

  1. Heat the oven to 350 F.
  2. In a medium bowl, add the contents of the broccoli and cheese from the package. Microwave 5 minutes, or until cheese is tangy. Set aside.
  3. Cook the chopped bacon in a frying pan for 4 minutes. Add green onions; cook 2 minutes. Add mushrooms; cook 4 minutes, or until bacon is fully cooked and mushrooms are tender. Let drain on kitchen paper over a plate. Set aside.
  4. In a medium bowl, beat the eggs and milk until combined. Add the broccoli-cheese mixture. Add 1 cup of cheese. Stir to combine. Set aside.
  5. Divide the drained bacon mixture evenly into the pie pans. Divide the broccoli mixture evenly and pour over the bacon mixture. Sprinkle the remaining cheese over both cakes.
  6. Bake for 40 minutes.
  7. Let cool for at least 12 minutes before serving.

Remark:

To prevent the edges of the crust from burning, place aluminum foil over the pies during the first 20 minutes of cooking. Remove after 20 minutes and cook uncovered until done.
